Meet Drissilla (Driss for short!), the mastermind behind Maison des Lys Vegan Pâtisserie. Driss grew up in diverse towns on the outskirts of Paris--the true home of the croissant. Eating fresh croissants and pastries straight from the boulangerie (bakery) represented a cherished part of her everyday life in France. Baking came naturally to Driss, who helped her mum make crêpes and chocolate cakes throughout her childhood.

 

In 2015, Driss arrived in New Zealand. She had recently embraced a plant-based lifestyle, and her ongoing love of baking and sharing that joy with others led her to experiment with vegan pastry. Pastry-making is a precise science, and Driss soon discovered that there was culinary chemistry to croissant-making. Without any formal training, she spent evenings and weekends honing her skills, baking tray after tray of croissants and pain au chocolat to achieve that perfect, flaky, buttery bite.

 

In 2020, a serendipitous collision of factors encouraged Driss to take things to the next step. She was on maternity leave with her first child Hazel, and her partner Peter had reduced work hours due to Covid-19. Driss officially launched Maison des Lys, and set out on her mission to craft viennoiserie, pastries and other classics that would wow all palates--not just the plant-based community. 

 

Now, Maison des Lys Pâtisserie is a beloved fixture in the Auckland culinary landscape for vegans and non-vegans alike. Customer favourites include viennoiserie, classic tarte au citron, ham and cheese croissants (plant-based, of course), dreamy Opéra cake, gluten-free delights, entremets, and more. Most recently, Maison des Lys has released macarons, filled croissants (crème brûlée or Nutella, anyone?!) and cruffins--muffin-shaped croissants dipped in Valrhona milk chocolate and filled with praline pastry cream.

 

All Maison des Lys delicacies are made by hand in a A Grade registered kitchen, using traditional techniques, and the highest quality ingredients--that are all vegan. Enjoy these plant-based twists on traditional French fare!
